Eggs with Wild Asparagus

This the most popular way to prepare wild asparagus is with eggs, but it can be used in many other dishes too.


500gr (1 bunch) wild asparagus, well washed

½ cup sunflower oil

2 eggs

10 black olive (optional)

salt to taste


Cut the asparagus into pieces 3-4cm long. Discard the tough lower parts of the stem. Heat oil in a frying pan, add asparagus and cook on a medium heat for 10 minutes. Add the eggs, stir and continue to fry. Add the olives and season with salt. Remove from the heat when the eggs are cooked.

Serve hot.
