Seared Tuna with Sage, Parsley & Dill (Izgara Orkinos)


4 tbsp olive oil

Juice of 1 lemon

Small bunch of fresh sage – finely chopped or shredded

Small bunch of parsley – leaves finely chopped

Small bunch of dill - fronds finely chopped

4 thick tuna steaks

Salt & pepper

Dill to garnish

In a small bowl mix together the olive oil, lemon juice and herbs, and season with salt and pepper. Add a small amount of olive oil to a heavy bottomed frying pan or griddle. Heat the pan until hot and then add the tuna steaks, sear for 1 minute on each side, then season with salt. Transfer the steaks to a serving dish and spoon the herb dressing over them. Garnish with dill and serve immediately.
